The clafouti is a dessert that originates from Limousin region of France, and while black cherries are traditional there are numerous variations using other fruits including red cherries, plums, prunes, apples, cranberries or blackberries. Fresh fruit is covered in a flan like batter and baked to sweet perfection. Batter is baked until cake like or left with a more custard texture depending on the recipe. The vanilla beans in our version really give a deep flavor and add elegant little specks!
